Forager Courses

Foraging courses advertised here taught by Miles Irving. We aim is to equip you with confidence and knowledge of both plants and their habitats. Plant identification skills are a key part of the teaching, starting with the general characteristics of the plant families: you will leave knowing how to recognise plants from at least five of the major families, as well as having found, identified and eaten several plants from each! In the process you will also get a feel for what to expect to find in different kinds of places or habitats.
Courses are based at our home in Chartham, near Canterbury in Kent. From there we will travel to the foraging sites, before bringing our foraged bounty back to the house to prepare and eat.

Sunday courses are from 10-4.30 with a cooked 3 course wild lunch, cooked by a professional chef. You can either pitch in and help with the cooking or sit back and wait for it to be served up. We supply soft drinks, if you want to drink anything else, you are welcome to bring along your tipple. Before lunch we explore some inland habitats, such as woodlands, river sides, meadows and fresh water marshes; after lunch we go a bit further afield to discover edible coastal plants.

Weekday courses are a bit more flexible, being aimed at teams or groups of people from businesses or other organisations. We can tailor a course to suit your needs, both in terms of content, location and duration. For example, we have a number of venues in Kent and elsewhere that can host one day or two day events for teams of chefs, with professional kitchen facilities available for wild food cooking workshops and accommodation in gorgeous rural surroundings. cost: to be arranged, according to your requirements.

The Loft Project is thrilled to host this collaboration between Miles Irving and the talented chef Rob Martin, who will be visiting us from Copenhagen. Rob has done time well spent in some of the Michelin guides most notable in Copenhagen including Noma, MR, and aoc.
The evening starts with a cocktail followed by an illustrated talk by Miles who will bring an assortment of plants for guests to taste and smell. Rob will then treat guests to a tasting menu using seasonal foraged ingredients paired with a selection of wines chosen by our sommelier.

‘FORAGER DAY’ @ the Pheasant Hotel, Harome in Yorkshire. Sister venue to the acclaimed Star Inn also in Harome, Pheasant Hotel is the brainchild of gifted chef Peter Neville, who has worked with the likes of Claude Bosi and Rene Redzipe and is himself a keen forager. Here’s the blurb from their website about the event:
“Following the success of our first Forager Day in June, Miles Irving, author of ‘The Forager Handbook’, will return to lead a small party around the local area in search of autumnal hedgerow treats and share his knowledge and experience as a professional forager.
The day starts at 11am with a coffee and briefing at The Pheasant, and concludes with a 3-course menu taken at The Pheasant, cooked by Pete Neville, using the freshly-foraged ingredients.

Tuddenham Mill, Suffolk

We Paul Foster, head chef supply the restaurant at Tuddenham Mill with foraged ingredients. Paul was formerly sous chef at Restaurant Sat Bains in Nottingham. Paul will be cooking dinner both evenings using ingredients foraged in the locality.
The weekend starts with dinner on Friday and an insight into the next day when you will be taken into the Suffolk countryside under the expert guidance of Miles to forage for ingredients for your evening meal. Dinner will be served with specially chosen wines to accompany each course.
Prior to dinner there will be a presentation on how to make the most of the foraged produce.

Prices from £630 per couple for the 2 night package in a Mill Stream or Water Meadow room (includes wines on the Saturday evening).

Saturday 30th October

Our annual autumnal food walk for mushrooms and berries on Hampstead Heath with the Gaia Foundation. 10am start, foraging on the Heath followed by foraged lunch at Gaia House.
